Monday Funday!


That’s right!  Call me crazy, but I look forward to starting a new week, every week.   If you don’t feel the same, it’s time to retrain your mind.  With a few little changes to your thinking habits, you can reclaim a day when the whole week lies untouched in front of you, full of potential…. remember, life is what you make it, so fix what you don’t like!


OK, so I’ve perfected a ‘clean’ MUFFIN recipe I’ve been working on for a few weeks…


I made this one kid-friendly since I’m not eating any, but you can greatly reduce your calories & carbs if you switch up the brown sugar for stevia or another low-cal sugar alternative.
You can also add 1 scoop of vanilla protein powder to increase your protein count by 4 grams per muffin, for a total of 10g of protein.

Dry ingredients:
-1/2 tsp baking powder
-1/2 tsp baking soda
-1/2 cup oats (ground into flour)
-1/2 cup coconut flour
-2 tbsp shredded coconut
-3 tbsp brown sugar 

Wet ingredients:
-1 tsp vanilla extract
-1/2 cup cottage cheese (2%)
-1/2 banana
-1/2 cup unsweetened vanilla almond milk
-4 egg whites
-1 cup blueberries/raspberries

Blend all except berries – add them at the end and just mix lightly. 
Spray muffin tin with coconut oil spray and fill 6 big cups.  
Bake at 350-375 for 20-22 mins.

Each muffin = 149 cals, 3.5g fat, 21g carb, 6g protein.

The last 2 workouts scheduled for Sunday, May 11 & May 18 will both be switched to Saturdays, May 10 & May 17, respectively.  THIS IS DUE TO POPULAR DEMAND.
